There is a huge difference between simply slurping up your mug of coffee in the morning and the intricacies of professional cupping. Not every coffee enthusiast works in the industry, and even for the ones who do, most don't have access to regular cuppings. Yet there is so much we can learn about how we taste and why professional tasters approach coffees a certain way, that can shed light on and expand our experiences of the coffees we drink. In this inclusive talk, aimed at all coffee lovers regardless of experience, Bailies Coffee Eilís Barret will guide the audience through ways of developing your own unique approach to tasting and how you can tailor the best experience for you - focusing on your unique palate, not a prescribed system. With a brief walk through of the physical and mental/emotional elements of tasting, this talk will help you better understand how to taste coffee in a way that truly makes sense in the context of you- an unmissable topic for any coffee lover!

Are we paying enough for coffee? While everyone is feeling the pinch of the cost-of-living crisis, it seems like a hard question to bring up, but are we? Coffee pricing is based on global commodity exchange known as the C market. This takes into account the expected global supply and demand of coffee but does not consider the variations and specific economies of where different coffees are produced. In this talk we present Prosperity Contracting offered by Caravela Coffee and committed to by Calendar Coffee. This type of contract bases the coffee price not just on quality but also on the specific cost of production for the origin in question. Could this be a solution to creating fairer prices for coffee farmers?

Speakers: Abbie Manning, Rory Gowan, Keith White and Enda Johnston

  • Sunday 3rd 4:10pm

Within the world of specialty coffee, you often hear the term ‘direct trade’ used, but speaker Nikola Sunko, Green Buyer and Roaster for Bell Lane Coffee, feels that in his time working in the industry, the actual definition of ‘direct trade’ has been difficult to pin down. Join Nikola as he delves into the ideas behind how he defines ‘direct trade’ and what lessons we can learn from its practical applications. Not one to be missed, this engaging think-piece will help any coffee lover gain a greater understanding of the green side of coffee and leave you with enough information to start exploring your own ideas surrounding what ‘direct trade’ really means to you.
